This is one of our all-time favorite recipes! I saved it from a newsgroup or forum posting years ago, but was recently told it was from the cookbook, "The Sugar Reef Carribean Cookbook," by Devra Dedeaux. See the Amazon link to the right to learn more about the cookbook (used copies should be available).
Jamaican Oxtail Recipe |
One of the most delicious Jamaican recipes there are, try this recipe today. |
Ingredients |
3 cups oxtail chopped |
½ cup onions minced |
½ cup escallion minced |
¼ cup garlic minced |
1 tbsp soy sauce |
¼ tsp salt |
¼ tsp black pepper |
¼ tsp allspice |
½ tbsp thyme leaves |
1 cup broad beans |
¼ cup vegetable oil |
½ cup carrots chopped |
Preparation |
1. Season oxtail with seasoning and allow to marinate for at least 1 hour. |
2. In a large frying pan cook broad beans in water until soft, then add soy sauce, |
carrots and oxtail and cook until meat and carrots are tender. |
3. Serve hot. |
Try placing the Oxtail in a pressure cooker to soften to take less time cooking. |
We realize that within the World Industrial Nations, there are large population of West Indians, specifically Jamaicans. Our mission at Jamaican Tube is to compile all information pertaining to the Jamaican culture and place them in one location. Our goal is to provide stimulating and entertaining information to our customers. The aim is to provide a provacative experience that is in demand by our constituents.
Lieutenant Colonel Norman A. Easy was born in Albert Town Jamaica and attend Holmwood Technical High School before immigrating to the United States, during his senior year, in 1979.
Colonel Easy was commissioned as a Reserve Armor Officer in the New York Army National Guard in 1983, after completing the Reserve Officer Training Corps (ROTC) at Fredonia State University. Colonel Easy diversified his Army career by transitioning through four other branches Infantry, Transportation, Logistics and Field Artillery.
Colonel Easy has held numerous key assignments at the company, battalion and brigade levels and have served in numerous countries such as Canada, Germany, Kuwait, Iraq, Egypt and South Africa. Concurrently, he maintained an adjunct position with the Regional Training Institute (RTI) in Cortland Manor, New York. He started as a Tactics Instructor and work his way through the ranks to conclude his service at the academy as the Officer’s Candidate School (OCS) Commander and the Region II OCS Commander, consisting of 7 north eastern states.
Currently, Colonel Easy is assigned as the Deputy Brigade Commander and full time Administrative Officer for the 369th Sustainment Brigade (Harlem Hellfighters), located in New York City. Colonel Easy is a graduate of numerous military schools to Include Command and General Staff College, Combined Arms and Services Staff School, The Field Artillery Officer Advance and Basic Courses, Infantry Officer Basic Course, Transportation Officer Advance Course and the Multifunctional Logistics Course. Additionally, Colonel Easy hold qualifications in Nuclear and Chemical Target Analysis, Total Army Instructor Certification, Air Assault, Antiterrorism Basic and Advance Officer Training and Homeland Security Planning.
Colonel Easy deployed to Iraq from 2003-2005 where he served as the Support Operations Officer for the 369th Corps Support Battalion (CSB) one of the largest CSB’s in country. He was responsible for the logistical support (ground and air) of 3 United States divisions and 1 coalition divisions, in addition to over 8,000 personnel that lived on or transitioned daily through his logistics base. Most recently, Colonel Easy re-deployed to Iraq with the 53rd Army Liaison Team and served as a liaison from Multi National Forces Iraq, to the Iraqi Ministry of Defense. In this role Colonel Easy worked, directly with Iraqi senior leadership, on the restructuring, re-equipping and retraining of the Iraqi Army. Additionally, Colonel Easy worked with several Non Government Organizations (NGO’s) to formulate a government sanctioned strategy to address the orphan population in Iraq. Colonel Easy was awarded two Bronze Stars for his performance during combat, one for each tour.
Colonel Easy is the recipient of numerous other military medals to include the Army Commendation Medal, Army Achievement Medal, Army Reserve Component Achievement Medal, Armed Forces Reserve Service Medal, Global War on Terrorism Expeditionary Medal, Global war on Terrorism Service Medal, Iraq Campaign Medal, National Defense Service Medal, Army Service Ribbon, Army Reserve Components Overseas Training Ribbon, the Legion Of Merit from the State of Connecticut, the World Trade Center First Responder Medal and numerous other New York State Awards.
In addition to his military accomplishments, Colonel Easy is very active in child welfare and family services. Currently, Colonel Easy is a member of the Board of Director’s at Children’s Village Inc., one of the leading child care agencies in New York. Colonel easy is also a member of several civic organizations, primarily lobbying for veterans entitlements.
Colonel Easy holds a Bachelors of Science (BS) Degree from the State University of New York and a Masters in Business Administration (MBA) from Touro University. Colonel Easy is currently pursuing his PHD in Public Policy and Administration at Walden University.
In his free time Colonel Easy enjoys bike riding, travelling and restoring his classic cars. Colonel Easy and his family resides in Freeport New York.

Health:
1. Drink plenty of water.

their journey is all about.

Instead invest your energy in the positive present moment.
13. Don't overdo. Keep your limits.
14. Don't take yourself so seriously. No one else does.

16. Dream more while you are awake.
17. Envy is a waste of time. You already have all you need.
18. Forget issues of the past. Don't remind your partner with

19. Life is too short to waste time hating anyone. Don't hate

Problems are simply part of the curriculum that appear and fade away
like algebra class but the lessons you learn will last a lifetime.
